Every year we look forward to spring and planting our raised bed gardens. The residents and team members work together, planting some beds with flowers and other beds with an assortment of vegetables. And each year we hope for the best!
But this is Colorado and the weather can be fickle. We’ve lost plant to late snows in May, to extremely dry conditions in July, and to early frost in October. But 2019 was a good year especially for our vegetable harvest!
Residents enjoyed picking zucchini, peppers, carrots, tomatoes and more. We all enjoyed eating them fresh out of the garden and then shared the bounty with our Chef, Abhaya, who has used them in various meals over the past few weeks.
What a wonderful way to nurture our spirits!
