A message from Executive Chef Shannon Soltesz: Grant Achatz, Executive Chef/Owner, of Alinea, is quoted as saying, “Food can be expressive and therefore food can be art.” Following the theme for February, Art: Awaken Your Passion, this menu was both my form of artistic expression and my passion. I was very excited to present this special four-course Valentine’s Day Lunch for our residents and guests at Juniper:
SOUP: Crab Bisque (Old Bay Seasoning, Lump Crab Meat, White Wine, Heavy Cream)
SALAD: Spinach Salad (Fresh Spinach, Egg, Red Onion, Sliced Mushroom, Warm Bacon Vinaigrette)
ENTRÉE: Prime Rib Served with Au Jus, Baked Potato Served with Butter & Sour Cream, Roasted Asparagus
DESSERT: Tuxedo Bomb (Milk Chocolate and White Chocolate Mousse Inside a Chocolate Cake Covered with a Chocolate Ganache)
