Juniper Village at Meadville

A fun summertime surprise!

Juniper Village at Meadville’s chef Stacy Salsgiver prepared a fun surprise treat to start the Fourth of July off with a bang! May we present her Ice Cream Cone Cupcakes! Try the recipe out for yourself and have a little fun with the ones you love.

ICE CREAM CONE CUPCAKES
CUPCAKE
1 box cake mix, any flavor
1 cup buttermilk
4 eggs
½ cup oil
16 flat bottom ice cream cones
Mix cake mix, buttermilk, eggs and oil together. Place ice cream cones into muffin tins and fill with 1/3 cup of batter. Bake in a 350 degree oven for 20 minutes, or until toothpick comes out clean.
ICING
½ cup butter
½ cup shortening
1 teaspoon vanilla extract
½ teaspoon almond extract
2 pounds powdered sugar
1 to 2 tablespoons milk
Cream butter and shortening until smooth. Add vanilla and almond extracts. Slowly add powdered sugar until well combined. Add a little milk at a time until you reach the right consistency. Pipe the icing on the cooled cupcakes using a large star tip. Decorate with sprinkles or other decorations. Color the icing and be as creative as you wish!
